Life Update

I've celebrated some important birthdays this fall... Including my lifelong friend, Jimmy's 30th


My nephew had a Curious George themed 2nd Birthday.



The Sossamons came to Wilmington for Halloween. 


I discovered the perfect bottle of red. 


And decorated with my favorite skeleton. 


Many nights have been spent my the fire, including this one.  My best friend's baby girl, Ava Louise, loves the fire, too. 


I have been enjoying a lot of oysters this fall. We had an Oyster Roast on this abnormally cold evening. 


My friend, Mary Lyons, tied the knot on a beautiful November night. 


I have been baking Blondies and enjoying copious amounts of fresh peonies. 


The family drove to Boone the day after Thanksgiving in search of my parents tree. The munchkin and I stayed warm in the car.


Now, my house is decorated and I am soaking up this magical Christmastime.

Christmas Wish List

I'm dreaming of....... 

A Grand Jeep Wagoneer-
I have been on the hunt for this car for three months.  I have decided to hold out for the perfect navy or green one.  This car = my dream! 




Hunter Rain Boots -  Both practical and fashionable, I have been needing a pair for quite some time. 



The Weekender -  I love the vegan leather.  This is the perfect bag for a weekend away.  Would be lovely to throw it in the back of my Wagoneer.

Project Kitchen Facelift

Since the moment I bought my house, I have hated the kitchen.  It was the one room I couldn't paint to life.  The cabinets were pickled, which in a kitchen as tiny as mine, made the space feel dark and depressing.  The room had been cranberry red when I moved in, so we painted it white in hopes of brightening the space.  This helped, but didn't make me love the room. 

My aunt and uncle graciously offered to tile my back-splash.  They are extraordinarily handy and unbelievably generous.  I knew I wanted subway tile, but adding it wouldn't take away my main gripe, the color of the space.  Everything in the room revolved around the granite.  I am just not a fan.  I like the functionality of it, but to me, for my space, it is too harsh.  The granite was keeping me from the white kitchen of my dreams.  I had a decision to make.  I could continue to add to the kitchen I hated, or I could finally bite the bullet and replace the granite. So I went for it.  I did something crazy, I bought a beautiful slab of white marble.  I know, I know- white marble!  It scratches, it stains!!!!  However, this was the one time in my life I could get away with it. I didn't have to worry about kids, or roommates, or the clumsiness of a man.  I live alone.  So I dared. And the truth is, all of those things are true.  It does scratch, it does stain.  It has endured a water stain and some minor scratches in the last month.  But, I still love it.  It gives it character.  It now has a story.  I had the opportunity to make my kitchen as lovely as I wanted; and ya'll, it is lovely.  Despite the insane gut that ended up happening, it turned into the perfect little kitchen.  

So without further adieu...... 


The Before: 


WHAT WE DID:  These original glass cabinets are the only ones we didn't move.  They went all the way to the ceiling.  They had glass doors.  All we had to do was install lights, paint them the perfect White Dove by Benjamin Moore, and re-arrange the dishes.  White subway tile and marble counter-tops bring it all together.  Voila!

WHAT WE DID:  This space we enhanced, but I didn't replace the dishwasher or the sink.  The only sink I want is a farmhouse sink, and given my space, is impossible to make happen.  We did install a new faucet, one more reminiscent of the era, which added a little something special.  We hung a bamboo shade to bring in a wood element, and finally, my uncle had the ingenious idea to spray paint my awkward, tiny dishwasher.  When I decide to replace the dishwasher, I will have to special order one, something I am not eager to do right now.  Now it at least appears to match the other stainless appliances.

WHAT WE DID:  We switched around the center cabinet with another in the kitchen.  This allowed us room to install an above-the-stove microwave.  This opened up the counter space that was housing my previous microwave, something I desperately needed.  We also took the cabinets all the way to the ceiling, creating the illusion that the kitchen was bigger.  Subway tile was put behind the stove.





The Before: 


WHAT WE DID:  This was the most wasted space in my kitchen.  What exactly are cabinets that tiny supposed to be used for?  We removed the small ones and rearranged the others.  The trash can was moved under the sink, which opened up the right hand side.  On day two of the renovation, my uncle decided to build me a pantry.  While I had one, it was far too small to be useful.  It now is serving as a broom and cleaning supplies closet.  This pantry was no easy feat, but the thing I am most excited about. He constructed the pantry on the right.  To the left, I now have working counter space, thanks to re-locating the microwave.  They even installed a new outlet, complete with a USB component.  I bought some fabulous folk art, by Charleston artist, Squeakie,that will go above the nook. The walls are painted Annapolis Green, also by BM.

life lately

I spent my first week of summer vacation in Hilton Head.  Lee was even more fun than we had anticipated.  He was fearless in the water and constantly on the go.  Mornings were spent at the park and going for bike rides. 


This is Plantation Dr, my all time favorite road.  The live oaks and Spanish moss create a canopy above the bike paths, providing relief from the balmy mornings. 


 Afternoons were filled with comical beach moments.  Wipe outs and sand tastings were only part of the adventure. I built sand castles, only to watch him revel in knocking them down.  Children have a magical way of re-opening our eyes to things we have seen a hundred times.



During the evenings, we sat by the bay, watching the sun go down.  


When I got back to Wilmington, my 29th birthday approached quickly.  Friday evening I went with my two best gal pals for an early birthday dinner.  We went to RX, a farm to table restaurant on Castle street.  EVERYTHING was amazing.  


Saturday morning, the official birthday, I grabbed my free birthday drink from Starbucks and patiently waited on my guests. 



Bethany and Lee came back down to celebrate.  She was charged with delivering my birthday present.  My sister is the best at surprises. I have been wanting this exact bike, but couldn't find one anywhere.  I thought I would have to settle for a new cruiser, but my brother-in-law found me this vintage gem.  I was thrilled.  Bethany then bought me a Nantucket basket and kroozie.  The bike is now complete.  BTW, how amazing are my hydrangeas?

We did birthday lunch at K-38. Sunday, my friend Mandy came over and we capped off the weekend with my favorite bottle of champagne.  This was one of the best birthdays I've had in a really long time.

birthday wish list

My birthday is a month away, so I compiled a wish list, so to speak.
  1. Face Cleansing Brush- I'm not as young as I once was.  At 29, I am much more diligent about taking care of my skin.  I even apply sunscreen these days. 
  2. Beach Cruiser- This would be perfect for night cruises around the neighborhood.

  3. Books: Any book by Julia Reed.  My summer days are spent reading, often times books I have put off during the school year. I especially enjoy southern literature.  I have not read her books, but am a long time admirer of her articles in Garden and Gun.  She has been on my "must read" list for a while. 



4. Art- I think I could find the perfect location for her.

tequila lime chicken tacos w/ strawberry salsa

Make these, immediately.  Do it while the strawberries are in season and the weather is perfect for grilling.


In the south, strawberry season symbolizes the start of summer. Today the high is 89 degrees. Typically, we skip right over spring and dive into summer.  This isn't something I am complaining about, especially after this past winter.  I will be even more delighted when school lets out and my days are spent with a good book, reading on the beach.  

Until then, I will keep whipping up meals like this. Last night, in honor of Cinco de Mayo, I made this salsa. I really appreciate unexpected pairings, such as strawberries and jalapeno peppers.  So unexpected, but so good.  Not to mention, look how beautiful it looks.  


Strawberry Salsa: 

Ingredients: 
2 cups of diced, fresh strawberries
1/2 cup of chopped cilantro
juice of 2 limes
zest of one lime
1/2 red onion diced
1 jalapeno pepper- seeded and diced
2 cloves of garlic- minced
1 tbsp of red-wine vinegar
salt/pepper

Making it Happen:

Combine all ingredients and refrigerate until ready to serve.



Tequila-Lime Chicken Tacos- this chicken was juicy, spicy, and a bit charred.   

Ingredients:
1 lb or about six boneless chicken thighs
1/4 cup of agave tequila
juice of one orange
juice of one lime
zest of one lime
2 cloves of garlic- chopped
2 jalapeno peppers- seeded and diced
1/2 tbsp of cumin
1/2 tbsp of chipolte chili powder
dash of cayenne
salt/pepper

Toppings: goat cheese, avocado, strawberry salsa (see recipe above)

Making it Happen:

Pat the chicken dry.  Put in ziploc bag or deep dish.  Combine with remaining ingredients and allow to marinate for at least an hour.  

Do yourself a favor and grill these on a charcoal grill, it really does add so much more flavor.  Brush hot grill with oil to prevent chicken from sticking.  Place thighs, skin side down, over hot coals.  Cook for 5 minutes and then flip, cooking an additional 8-10 minutes.  Remove from grill and place in aluminium foil to rest for 20 minutes.  This will allow all the juices to settle.  

Shred the chicken and place atop tortilla shell.  Cover with goat cheese, strawberry salsa, and avocado.

Spicy Chicken Tacos w/ Goat Cheese Queso

I headed to Raleigh this weekend.  I hadn't seen Lee since February and I was missing him something fierce. We spent loads of quality time together, playing outside and cooking.  

Bethany and I love to cook and we love to cook together even more.  We are constantly trying new recipes and sharing them.  We always say it would be so nice if we lived close by and could cook together more often. This weekend we tried a new taco recipe we had seen on our favorite blog. 


First, we roasted bone-in chicken thighs.  Chicken always has more flavor if you roast it on the bone; a lesson I learned years ago from The Barefoot Contessa.


This Goat Cheese Queso was a game changer.  We smothered our tacos in it and dipped tortilla chips in the queso after dinner.


Spicy Chicken Tacos 

The Ingredients:
2 lbs of chicken thighs
3 limes
1 red onion
1 yellow onion
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp chili powder
1 tsp of paprika
chopped tomatoes
corn or flour tortilla
olive oil

Making it happen:
Preheat oven to 425.  Spray a baking dish with non-stick cooking spray.  Lay sliced yellow onion on the bottom of the dish.  

Pat chicken thighs dry and cover in spice rub.  Lay thighs on top of onions.  Place lime wedges in between thighs.  Cover with aluminum foil and bake for 45-55 minutes.  Pull from oven and let sit for 15 minutes or until thighs are cool enough to shred.  Shred chicken and combine with roasted onions.  

Assemble tacos with whatever toppings you desire, just don't forget to put this queso on top.

Spicy Goat Cheese Queso:
1 tbsp unsalted butter
1 jalapeno pepper, diced
1 cove of garlic, minced
1 tablespoon flour
1/2 cup milk
6 ounces goat cheese, crumbled.

Making it happen:
Melt the butter.  Saute the jalapeno and garlic in the butter until aromatic.  Add flour to create a rue.  Whisk in milk and reduce heat to med-low.  Let thicken.  Add in goat cheese and stir until melted.  Serve, on everything.

The following day we made nachos with our leftovers.
